Suggestions for a foreign dish that requires less effort.

Iíve recently joined a cooking class at the local YMCA and one of our new projects is to learn how to cook a foreign dish. Iíve learned all the basic skills in cooking but I donít feel a hundred percent confident on my skills yet, so Iím trying to look for a dish thatís fairly easy to prepare but nothing too simple that it makes me look amateurish. Any suggestions?
